A player is outkicked when their opponent has the same hand as them but they have a better kicker. For example, you hold 10♥7♥ on a board of 10♦J♣4♣8♠2♥ and your opponent has A♦10♠. You both have a pair of 10s but your next highest card is the Jack on the board and their next highest card is the Ace, you are therefore outkicked.
